Between 12 July-30 July 2021 ten students from “noursishment”qualification took part in professional training in Montijo-Portugal.
During the training participants make following activities:
To make basic math calculations in order to dose the raw material
– To establish the necessary of raw materials according to portions’ number.
- Obtaining the cold Mediterranean starters, based on aspic, liver and chicken meat.
- Obtaining warm Mediterranean starters (souffles, puddings, spaghetti).
- Using decorating and plating techniques of the food dishes.
- Specific arranging operations regarding serving.
- Serving the clients.
- Making the mise-en-place.
- Making the bills for the clients.
